especially  the Bolivians for sure

We all have our points of view ! On the freezing debate i allways ask myself
&quot;wheres the fun in that&quot; ....... imadgine a world where we got everything we wanted? part of my pleasure in coffee is not just in final extracted (perfectly of course.. he he) Shot, but the process of finding, cupping and debate with friends on quality etc. part of this is knowing its a get it while its around type of phlosophy.

		<description>i know it, steve.  i definitely hear what you&#039;re saying about just rotating the different regions vis a vis the main and fly crop harvests.  i see clearly both sides of the freezing coin:  the one side making arguments about buying locally and freshness and respecting the seasons mother nature gives us, while the other side claims that there is no such thing for us in the northern hemisphere as &quot;local&quot; coffee, that there are many, many, many examples of preservation of foods that great cultures and palates celebrate such as cheeses, wines, cured meats, cigars, aged spirits and the like.

all that to say,  i think the two years timeline is about as far as i would be comfortable stretching the frozen greens.  maybe that&#039;s still short sighted of me, as perhaps in twenty years frozen greens of five, ten, fifteen or more years may be the norm.  but i definitely am into the experimentation around it to see what is workable and what is not, which is why i&#039;m a keen supporter and participant in the barismo.com freeze experiment (and why i&#039;ve got all those greens from edwin in a freezer here!).

		<description>I&#039;m not sure if it is Aaron. It just slots into the 12 month rotational greens. I think it will add some clarity to Colombia which I believe has suffered having two auctions. I don&#039;t see a need to store 2 years worth, just focus on tow different regions different years.

I must do some more reading into the freezing Green debate, I&#039;m still a septic, but remain very interested, and there are some big movers making noises about it, so there must be some substance to it.</description>
